結論から言うと、Standardの運賃なら変更は可能です。

FAREには他にも様々な選択肢がありますが、そのほとんどは
会員カードを持っていれば割引がきくというもので、旅行者には
当てはまりません。
旅行者でもOKの割引もありますが、それだと切符の変更がきかないものが
多いです。よってくろまるさんの場合は、Standardにしてください。

FAREの横に、青地でTariff informationとあるところをクリックすると、
各種料金の説明が出てきます。

【BOOKING CHANGE】
Can be done from the ticket desks, travel agencies, self service
tellers, from this site and by telephone by calling the Call
Center on 89.20.21* or the issuing travel agency, also in
ticketless procedure:

-an unlimited number of times, from the day of issue until
train departure;

-only once until to three hours after train departure.

The booking change is free.
Agencies may request payment for this service.

【TICKET CHANGE】
This is only possible once from day of issue and until train
departure and can only be done at the ticket desks or travel
agencies.

予約の事前変更なら何度でもできて(列車発車後は3時間以内なら一度可)、
チケットの変更は一度限りだそうです。
つまり一度、切符の形で発券してしまったら、変更は一度しかきかない
・・・ということでしょうか?(←あんまりよく分かっていない)
